Ingredients

  • 4 Cups water
  • 2 Tbsp chicken bouillon (or to taste)
  • Pinch of salt
  • Dash of white pepper
  • 2 Tbsp corn startch
  • 1/4 Cup cool water
  • 4 eggs
  • Green onions to garnish

Instructions

  1. Heat 4 cups of water until warm.
  2. Add in the chick bouillon.
  3. Add in a pinch of salt and white pepper.
  4. Mix cornstarch with the cool water.
  5. Add corn starch slurry to broth.
  6. Turn up heat until slightly simmering and stirring until broth thickens.
  7. Beat eggs in bowl until mixed well.
  8. Turn down heat and begin stirring broth as you slowly add in eggs.
  9. Let set for 2-3 minutes.

Cooking Tips

When using corn starch to make a slurry use cool water. When you add corn start to hot water it can form lumps.

Also never add a cornstarch slurry mixture to hot broth, it could instantly begin to gel causing lumps. Always add to cool to warm broth and begin stirring as you add it. Keep stirring until it thickens.
